grid and guides setup

i always see those circles in every type design or logo design presentation
and i never got an answer about why they do them in illustrator
and how to align them perfectly with the type?
can some one help me please

Every time I see these I think to myself: "yet another fool who thinks optical geometry equals mathematical geometry" :) Not necessarily a sign of quality, and I certainly wouldn’t bother copying their presentation style.
