Hi there, can anyone enlighten me as to what this particular serif is? I'd also be interested in knowing what other serif fonts have that 'st' ligature, if that's the right term. Thanks!

I think this is Hoefler Text. There are quite a number of fonts that contains the st ligature. Someone here may help you with a list? ;^)
I think this looks like a version of Garamond, but I'm not sure which foundry. The R foot serif is not like the Adobe versions, because it sits flat on the baseline, but I can't seem to find one that seems identical in all details.
As for the ligatures like st and ct, most of the OpenType versions of classic serif families have them and some of the older (PS/TT) families do as well, usually when they are from the major foundries.

But Mike, on the other hand you gave Furryvision a hint on fonts containing the st ligature. Adobe Premier Pro, Baskerville 1757, Exemplar and Delicato is a few examples...
Serif fonts with 'ct' and 'st' ligatures:
Mrs Eaves
Big Caslon
Adobe Caslon
Adobe Garmond (ct only)
Karmina
Athelas
ITC Galliard
LTC Village No. 2
LTC Caslon
LTC Garamont Text
LTC Cloister
I'm sure Stephen's list is just a starting point. As I said earlier, most of the Open Type releases, especially of new serif families, will probably include these ligatures. For example Adobe's Minion Pro, Garamond Premier Pro, Arno Pro, Brioso Pro, Jenson Pro, Warnock Pro and probably most of their other "Pro" releases all have st, ct and sp ligatures (although Garamond Pro has only the ct, as Stephen stated).

A seemingly underused, but beautiful typeface, with both ct and st ligs is FF Clifford.
