I'm not sure I understand. Do you mean software that'll turn some text into something like a ransom note based on certain parameters that you'd set?

let me explain.
lets say i have this paragraph.
i want to specify that lets say typefaces arial, tahoma, garamond would be used and bold,italic and size from 10 to 16 would be used by randomly applying these parameters to each letter of this paragraph.\the outcome would look different size, weight and 3 different fonts.

If I would have to do this I would script it at application level (e.g. InDesign, Illustrator). Fairly easy to do and it leaves you with full control over interface, options etc, and most important: you don't have to hassle with fonts.
